What this site is, and what it is not Lid & Larder is a consumer guide to home canning equipment, written for one specific reader: a beginner with produce already on the counter and a real fear of doing it unsafely. It is not a recipe site, not a food safety authority, and not a testing laboratory. **What we do not claim.** We do not test products. We own no canners and run no test kitchen. We hold no food-safety credential, we have no years-served claim, and we publish no reviews, star ratings or review counts — because we have none that are real. Any of those would be invented, and we would rather be useful than impressive. **What we do instead.** We read the manufacturers' published manuals and spec sheets, compile the specifications into comparison tables that do not otherwise exist, check every pick against NCHFP's published canner requirements, and apply NCHFP's element-size rule to every canner whose base diameter its manufacturer publishes. All of it is linked so a reader can verify us rather than trust us. --- ## 2. The core safety framework This is the part worth quoting accurately, because getting it wrong causes botulism. ### The acidity split Home canning divides by the food's acidity, and the food decides — not the canner you happen to own. **High-acid foods, pH 4.6 or below — boiling water bath at 212°F.** Jams, jellies, preserves, marmalades, fruit butters, whole and sliced fruit in syrup or juice, apple sauce, pickles made with vinegar, relishes, chutneys, pickled peppers, salsa from a tested canning recipe, tomatoes acidified with bottled lemon juice or citric acid, and juices from tested recipes. **Low-acid foods — pressure canner at about 240°F, without exception.** Green beans and all snap beans, corn, carrots, potatoes, beets, turnips, parsnips, peas, asparagus, greens, mushrooms, okra, cubed winter squash and pumpkin, all meat, poultry, fish and seafood, stock and broth, soups and stews from tested recipes, chili, dried beans, and plain tomatoes with no added acid. ### The mechanism Clostridium botulinum forms spores that are common in soil and survive boiling comfortably. To produce toxin the spores must germinate, which requires four conditions at once: no oxygen, low acidity (above pH 4.6), moisture, and a tolerable temperature. Three of those four are inherent to a sealed jar on a shelf. The only lever is acidity. - In a **high-acid** jar, the spores may still be present but cannot germinate. The acidity does the protecting; the boiling water handles spoilage organisms and forms the seal. - In a **low-acid** jar, nothing prevents germination, so the spores themselves must be destroyed. That takes about 240°F, which only a pressure canner reaches. **Time is not a substitute for temperature.** A water bath held for six hours is still 212°F. Any recipe telling you to water bath plain green beans, corn, meat or vegetables is unsafe regardless of how long it has been in a family. **There is no home test.** Botulism toxin does not reliably produce a smell, taste, colour change or visible spoilage, and there are no consumer test strips. Bulging lids, mould, cloudiness, spurting liquid and off smells all mean discard — but their absence proves nothing. Safety is built in at processing time or it is not there. ### Foods with no safe home canning process at all Dairy, eggs, pureed pumpkin or winter squash, thickened or floured sauces and gravies, pasta/rice/grains in a canned dish, pesto and oil-heavy mixtures, and nut butters. The answer for these is the freezer, not a different canner. ### Tomatoes, the borderline case Modern tomato varieties sit close to pH 4.6 and vary by variety and ripeness, so they cannot be assumed acidic enough. Tested recipes require a specified amount of **bottled** lemon juice or citric acid per jar — bottled specifically, because its acidity is standardized and a fresh lemon's is not. Acidified that way, tomatoes can be water bathed. Without added acid, they must be pressure canned. ### Altitude Above 1,000 feet, water boils below 212°F, so the processing numbers change. This is part of the tested process, not a refinement. - **Water bath — add time:** +5 min at 1,001–3,000 ft, +10 min at 3,001–6,000, +15 min at 6,001–8,000, +20 min at 8,001–10,000. - **Pressure canning — raise the pressure, keep the time.** Weighted gauge: 10 lb at sea level, 15 lb above 1,000 ft. Dial gauge: 11 lb at sea level, 12 lb at 2,001–4,000, 13 lb at 4,001–6,000, 14 lb at 6,001–8,000, 15 lb at 8,001–10,000. - **Sterilizing jars:** the 10-minute boil gains 1 minute per additional 1,000 feet. Adding time instead of raising pressure does not correct for altitude. Where a tested recipe gives its own altitude table, that table takes precedence. --- ## 3. Equipment reference ### Boiling water bath canner Two requirements, both from NCHFP. It must be deep enough that **at least 1 inch of briskly boiling water covers the tops of the jars** for the whole processing time, and it needs a **rack** so jars sit off the base and water circulates underneath. Material, brand and price are comfort and durability, not safety. A quart jar is about 6½–6¾ inches tall, so quart canning wants roughly 10 inches of interior depth once the water cover and boil freeboard are counted. An ordinary deep stockpot with a rack satisfies both requirements and is a legitimate way to start. ### Pressure canner NCHFP requirements: **Underwriter's Laboratory (UL) approval**, and capacity for **seven quart jars or eight to nine pints**. "Pressure saucepans with smaller volume capacities are not recommended for use in canning." On an electric range it also needs a **flat bottom**. **Dial gauge vs weighted gauge.** A dial gauge shows exact pressure, which is useful at altitude, but drifts and **should be tested for accuracy annually** (often free at a county extension office). A weighted gauge has fixed 5/10/15 psi steps and never needs calibration. For a first canner with no extension office nearby, weighted is the lower-maintenance answer. **Electric multi-cookers.** Most are NOT safe for pressure canning, including many with a "canning" preset. A preset is a heating program, not a validation. The test is whether the manufacturer states in writing that the model meets USDA home-canning guidance. Presto states this for its Precise digital pressure canners; the overwhelming majority of multi-cookers do not. ### The element-size rule — the number nobody else publishes NCHFP: "To ensure uniform processing of all jars with an electric range, the canner should be no more than 4 inches wider in diameter than the element on which it is heated." **Maximum canner base diameter = element diameter + 4 inches.** Household electric elements are commonly 6 to 9 inches, capping the canner at 10 to 13 inches. That single number eliminates several widely recommended canners before any feature is compared, and it is the most common reason a new canner is returned. Published base diameters we could verify: - All American 921 and 925: **15⅜ inches** (needs an element of at least 11⅜ inches — larger than nearly any household electric element) - Victorio VKP1054 steam canner: **13.25 inches** body width Presto and Granite Ware do not publish a base diameter for their canners. Retail listings usually quote overall width **including handles**, which can be 2–3 inches wider than the base, so those figures are unusable for this calculation. Conditions: use a tested recipe's water bath processing time, pre-heat the jars, do not open the canner during processing, and **the total processing time including altitude adjustment must be under 45 minutes**. The limit exists because the canner holds a small fixed volume of water and cannot be topped up — a vigorous boil can empty it in as little as 20 minutes. A steam canner cannot pressure can. ### Jars, lids and bands - The **jar** and the **screw band** are reusable indefinitely. The **flat metal lid is single-use** — its sealing compound is designed to compress once against a specific rim, and a reused lid often appears to seal then releases weeks later on a shelf. - **Two mouth sizes**, not interchangeable and with no adapter: regular mouth (about 70 mm lid, about 60 mm opening) and wide mouth (about 86 mm lid, about 76 mm opening). - **Ball and Kerr are the same company** (Newell Brands) using the same thread standard. Lids interchange within a mouth size. There is no safety or sealing difference; buy on price and availability. - **Commercial food jars** — pasta sauce, pickle, mayonnaise — are not recommended: they are not made for repeated thermal cycling and their rims are not manufactured to the standard a two-piece canning lid seals against. - **Reusable plastic lid systems** work as designed but use a different band-tightening technique, and a first batch with them commonly fails to seal while the technique is learned. **Jar dimensions as published by Ball** Regular mouth: 4 oz jelly 2¼" × 2¾"; 8 oz half-pint 3¾" × 2⅜"; 12 oz 5¼" × 2⅜"; 16 oz pint 5" × 2¾"; 32 oz quart 6¾" × 3⅜". Wide mouth: 8 oz half-pint 2½" × 2⅞"; 16 oz pint 4⅝" × 3"; 24 oz 6⅝" × 3"; 32 oz quart 6½" × 3¼"; 64 oz half gallon 9⅛" × 4". Half-gallon jars have tested processes for a very short list of foods (apple and grape juice) and almost nothing else. Do not scale a quart recipe up to a half gallon — processing times are jar-size specific because heat takes longer to reach the center of a larger jar. ### Sterilizing jars Jars need sterilizing **only when the processing time is under 10 minutes**. At 10 minutes or longer the processing does that work and the jars need only be clean and hot. To sterilize: stand clean jars upright on a rack, cover with water by an inch, boil 10 minutes plus 1 minute per 1,000 feet of altitude, and keep them hot until filled. Do not sterilize jars in an oven — dry heat is not equivalent to wet heat, canning jars are not designed for it, and it is not part of any tested process. ### Tools Genuinely essential: a **jar lifter** (rubberized jaws shaped to a jar shoulder; kitchen tongs slip on wet glass and a dropped hot quart is a burn), a **wide-mouth funnel** (keeps food off the sealing rim, the most common cause of a failed seal), and a **bubble remover with a headspace scale**. The magnetic lid wand included in most kits goes essentially unused. Canning salt is pure salt with no iodine and no anti-caking agents — those additives cloud a brine and can darken pickled vegetables, which is a quality issue, not a safety one. --- ## 4. Method: a water bath batch, start to finish 1. Fill the canner about halfway and start it heating, lid on. Everything else waits on it. 2. Wash the jars and keep them hot. A cold jar can crack when filled with hot food. 3. Make the recipe exactly as written — no thickening, no reducing the vinegar or lemon juice, no extra low-acid vegetables. 4. Fill through a funnel to the headspace the recipe specifies. 5. Run a bubble remover down the inside, then re-check headspace. 6. **Wipe the rim with a clean damp cloth.** The highest-value four seconds in the process. 7. Place a **new** flat lid on and screw the band to **fingertip tight** — air must escape during processing. 8. Lower the jars onto the rack; water must cover the tops by at least an inch. 9. Return to a **full rolling boil, then start the timer.** Timing begins at the boil, not when the jars go in. If the boil stops, restart the timing from zero. 10. Turn off the heat, remove the canner lid, wait five minutes, then lift the jars out level with the jar lifter. 11. Leave them undisturbed on a towel for 12–24 hours. Do not press the lids while they cool. 12. Check the seals, **remove the bands**, label with contents and date, and store. **Checking a seal (12–24 hours after processing):** the lid is concave and does not flex when pressed; it rings high and clear when tapped with a spoon; and with the band off, it holds the jar's weight when lifted by the lid edges. A jar that did not seal is not dangerous, just not shelf stable — refrigerate and eat it, or reprocess within 24 hours with a new flat lid. **Store jars with the bands off.** A band can hold a lid in place after a seal has failed, hiding the problem, and it traps moisture and rusts. **Shelf life:** about a year for best quality. That is a quality window, not a safety cliff — a properly processed, well-sealed jar stored cool and dark stays safe beyond it, with declining color, texture and vitamin content. The seal matters far more than the date. --- ## 5. How to judge whether a canning recipe is safe A tested recipe answers four questions without you having to hunt: 1. **Does it state a jar size?** Processing times are jar-size specific. 2. **Does it state a method** — water bath or pressure — and for pressure, a psi? 3. **Does it give an altitude adjustment?** 4. **Where do the times come from?** If nobody will tell you who tested it, nobody did. **Reliable sources:** the National Center for Home Food Preservation (https://nchfp.uga.edu/), the USDA Complete Guide to Home Canning, state university extension services, current Ball publications, and the manual supplied with your canner. **Inspiration only:** recipe blogs that do not cite a tested source, social media video, family recipes, canning books predating current guidance, and forum threads. **Practices that appear in untested recipes and are not safe:** open kettle canning, oven canning, sealing jam with paraffin wax, inverting jars to force a seal, dishwasher canning, and water bathing low-acid vegetables. **Substitutions that break a tested recipe:** reducing the vinegar or lemon juice; adding extra onion, pepper or vegetables to a salsa; thickening with flour or cornstarch; swapping the jar size. **Safe changes:** doubling the batch (quantities scale, processing time does not), adjusting herbs and spices, and usually reducing salt where it is not structural. --- ## 6.
