A funnel is not about tidiness. Food on the sealing rim is the single most common reason a lid does not seal.

A canning funnel is a short, wide funnel sized to sit inside a jar mouth so food goes into the jar rather than onto the sealing rim. Rim contamination is the most common cause of a failed seal, which makes the funnel a seal-rate tool rather than a tidiness one.
It is easy to look at a canning funnel and see an optional convenience. It is not. The two-piece lid seals by molding its compound to the exact surface of the rim, and a smear of jam or a single seed in the way prevents that. A funnel is how you stop putting things there.
What makes a canning funnel different
- Short and wide, not tall and narrow. Chunky food has to pass through it without bridging.
- Sized to sit in a jar mouth so it rests stably and you can pour one-handed.
- Fits both mouth sizes, on the better designs — a stepped rim that seats in regular and wide mouth jars.
- Headspace markings, on some versions. Genuinely useful, and not universal — check before buying if that is why you want it.

Both work. Stainless is the nicer object and the one to buy if you are canning a lot; plastic is the one already in the tool set you were going to buy anyway. This is a preference, not a performance question.

Using it properly
- 1Seat the funnel in the jar mouth before you start pouring, not while holding a full ladle.
- 2Fill to the headspace the recipe specifies — the gap between food and rim is part of the tested process.
- 3Lift the funnel straight up, so it does not drag food across the rim on the way out.
- 4Wipe the rim with a clean damp cloth anyway. The funnel reduces mess, it does not eliminate it, and this step takes four seconds.
The honest recommendation
Get one in a tool set and do not think about it further. If you find yourself canning most weekends, or you are doing a lot of tomato, upgrade to stainless — mostly because it will not be permanently orange, which is a real if unserious benefit.
