The first harvest checklist
A list you can shop from, split into what you need this week and what can wait until you know you like this.

For a first canning season you need a water bath canner with a rack, a case of jars, new flat lids, a jar lifter, a funnel, and a tested recipe book. That is the whole essential list. A pressure canner, a second jar size and specialty tools are all second-season decisions.
Canning has an unusually short genuine shopping list and an unusually long marketed one. This page separates them, and it is ordered so that if you stop reading halfway you will still have bought the right things.
Before you buy anything: measure your element
One measurement decides which canners are available to you, and taking it costs thirty seconds. Lay a tape measure across the largest element or burner you plan to can on, edge to edge. Write the number down.
The NCHFP's rule for an electric range is that a canner should be no more than 4 inches wider in diameter than the element it sits on, so that jars heat evenly. An 8-inch element caps you at a 12-inch canner. That is a genuine constraint that eliminates some widely recommended models, and will it fit your stove will do the arithmetic and show you which published diameters clear it.

Things you almost certainly already own
- A large stockpot for cooking the food itself, separate from the canner
- A ladle, a long spoon and a colander
- Clean tea towels for wiping rims and for cooling jars on
- A timer — your phone is fine, but set it the moment the water returns to a rolling boil
- A permanent marker or labels. Unlabelled jars become mystery jars by February

Buying the kit versus buying the pieces
A four-piece tool set almost always costs less than a decent jar lifter and a stainless funnel bought separately, so the set wins on price even though you will barely touch the lid wand. How much to buy
A canner load is seven quarts, nine pints or twelve half-pints in a typical 21.5-quart canner, so buy jars in multiples of a full load. A dozen pints is one comfortable batch with a few spare. Buy at least double the lids you have jars for, because lids are single-use and they are the item that disappears from shelves first in September.
